Well, sad to say, it’s been almost a week since I blogged last. We were just a LITTLE bit busy with Nora’s birthday last week and lots of family and friends coming into town to celebrate our special little girl. What a joy this weekend has been! But more on that later:
Week 4 was an incredibly good week for me, especially yesterday. I met almost all of my goals amidst the birthday week chaos and showed some big improvements!
Running-I can’t even believe it, but I ran a full 5K on my own yesterday. YOU GUYS!?!?! 3.1 miles! I did it! I can not even tell you how proud I am of myself. Not in a boastful way, but the fact that I have never stuck with running this long in my life to meet a goal like this. I ran for the first time with out Nora yesterday when I met my goal. The fall weather was perfect for an early morning run, and I felt GREAT the entire time. I never thought that pushing Nora in her stroller really made that much of a difference, but when I looked back at my log the past 2 weeks on my running app, my average mile was 1 1/2 minutes faster with out her in tow. I guess having an extra passenger along for the ride really does make me slower 🙁 Oh, well. I still plan on running with her for the race in October. I also signed up to run another 5K in November to benefit a family friend of ours who’s daughter has quite a few medical bills. Excited to participate in another run and help a great family out while doing so.
Water-With everything going on this weekend, I didn’t quite meet my water requirements everyday. But now that all the hub-ub is done, I plan on getting right back on track. I didn’t think that it would make much of a difference not drinking what I had been, but I felt it, that’s for sure!
Eating-Although Nora’s party was strictly sweets and sticky finger foods, I managed to do pretty well not consuming much of it. I did indulge in a cupcake on Friday and did my fair share of spoon licking while making all of her delectable yummies for the party. Even when we ate out with Eric’s family, I did a good job of only ordering water and watching my portions, even a my favorite Mexican restraint. GO ME!
Weight-I managed to still stay at 130lbs this week. It doesn’t surprise me that I didn’t lose any this week. Hoping to see the scale budge a little bit in the next couple of weeks :/
Recipes-I can’t lie…I only made one new recipe this week. Well, I made 5 new recipes, but NONE of them were healthy…at all. I have a couple of new ones already lined up for this week though, so I’m looking forward to getting back into the kitchen again for some healthy meal and snack goodness. The one I tried this week was some makeshift Quinoa. I boiled a cup and a half of this yummy rice substitute for about 15 minutes in some chicken broth, then sautéed some green peppers, Rotel and black beans together for a few minutes and mixed it in with the cooked Quinoa. I had some cilantro on hand, so I chopped up some of that, too and tossed it all together. It was delicious! Eric ended up even taking some of the leftovers to work and used it as a chip dip. We will most definitely be making this side dish again very soon!
Happy running and improving my 5K time to me this week! I’m excited to see what happens next!
