Well friends, week 3 of my changes and running plan are under my belt. There were numerous highs and lows again this week, and a slight tummy bug had me feeling a bit down for a couple days, but I’m right back up where I need to be again. So here are this week’s stats.
5K Training-I am up to running 11 minutes at a time for 3 circuits. I am definitely feeling stronger with each day. I run the same route every day, so it’s been fun the past few weeks to get to certain points, knowing that I had to stop there earlier in the week, but now be able to keep running. I will admit, my miles are slow – like 10 minute miles slow – but they are steady and consistent. And for that I am really proud! When training with an almost 1 year old, you just need to go into it knowing you will have to make some stops along the way. And with Nora, it’s no exception. Sometimes that can be a bit frustrating when I’m really trying to push myself, but I honestly wouldn’t want to be doing it any other way than with her.
Eating-Oh friends, I struggled here this week! With the long holiday weekend, there was tons of temptation. My family came over Monday morning and Dad made his famous crepes. So I decided to count that as my “skip” meal for the week. OK, no problem…but then we went to Culver’s for dinner…. Girls, I have been thinking about a Butter Burger for more than 2 weeks. And I caved and got one. Woe is me, woe is me. I was sicker than a DOG for 2 days after eating there. I’m not sure if it was the obnoxious amounts of grease or just the massive non-portion control, but I felt awful. I knew that I was going to have some mess ups along the way, but I didn’t realize I would feel so physically bad from them. So I guess you live and you learn, right? No more Butter Burgers for this girl! Other than the weekend, I was able to do really well through the week with portion control and healthy, clean meals and snacks.
Weight-No weight change this week, still 130 lbs, but I am actually starting to SEE a little bit of change in my body. Eric and I are both beginning to see some changes in my legs and tummy and I can even feel it when I put on my shorts/jeans. Nothing huge, but things are becoming less jiggly and bloated. At the end of the day, the numbers didn’t change this week, but I FEEL great! And that’s what I’m going for!
Water-Water intake is still going strong! I am loving the way that it’s making my skin glow, that’s for sure! My face hasn’t been this clear or bright in a long time. In other news, I switched Nora over to whole milk this week. She took it like a champ, so we BOTH met our “liquid” goals for the week 🙂
Recipes-We did a couple of new dishes this week. We had salmon night at our house on Friday night and did 3 different baked recipes (425 for 15-17 minutes). The first was simply lemon juice, salt and pepper – yum. The second was lemon juice and garlic salt – equally yum. The third was the best in my book – lemon juice and Oklahoma Joe’s French Fry Seasoning. OK, so I kind of threw that one together on my own, but it was DIVINE! We had leftover salmon on our salads for lunch the next day as well. It was a win-win for everyone. Little Nora even got in on the fish fun! The snack recipe I did this week was a bit tricky. I wanted to somehow use the leftover turkey we had from our turkey dinner last Saturday. We are big crackers/cheese fans around here, so I wanted to try something a bit different. I whipped up my chicken salad recipe, but made a few changes:
1 I cubed 3 cups leftover turkey – both white and dark meat
2. Sliced up 1 cup grapes and 2 stalks celery – mixed that in with the turkey.
3. Chopped up 1/2 cup pecans and mixed it with 3/4 cup light Miracle Whip.
4. Added turkey mixture to MW mixture and stuck it in the fridge for a couple of hours.
5. spread over multi grain crackers and there you have a light, filling snack! And we couldn’t even tell the difference between the turkey and chicken. It was awesome and I’ll definitely be making this snack again.
